Meat Bread

I love bread, any kind, it doesn't matter. One thing better than bread, is bread with bacon in it. I make my own bread, but you can use the pre-made dough you find in the grocers freezer.

Here is an easy meat bread recipe:
Yeah, it tastes as good as it looks!

Ingredients:

I frozen bread dough
2c Cheddar Cheese 
3 Jalapenos chopped
6 strips of bacon - cooked/chopped
1 Egg white for brushing.

Directions:
  •  Let the dough rise one time using the directions on the package
  • Once it has risen, usually it's double in size, turn out onto counter and roll to about a 1 1/2in thickness.
  • Add the cheese, jalapenos and bacon and kneed to incorporate all the ingredients into the bread, but don't over kneed. NO BUENO!
  • To form a loaf, pat the dough into a rectangle, fold the long sides to the middle then fold under the ends. Pinch the seams closed.
  • Place in a greased (I just spray w/ Pam) loaf pan. Cover w/plastic and let rise again. Bout 30 min.
  • Pre-heat oven to 350 and prepare a water bath. When baking bread loafs you should always bake it in a water bath. Makes the crust nice and crispy w/o burning it.
  • When bread has risen for the second time slice the top so steam can escape and brush with egg white.
  • Water Bath - when bread is ready for the oven, put the loaf pan in a larger pan that is about 2-3 inches deep and with room on the sides to fill 3/4 of the way with boiling water. Don't put the water into the bottom pan until you have it on the oven rack. Otherwise you can really burn yourself.
  • Bake about 35-40 minutes(middle rack), until bread is golden brown.

I like mine with an egg over easy!

Cottage Pie

One of my fav things in the whole world is cooking. Me LOVES to cook. I think this would be a great place to post some of my dishes:)
Cottage Pie vs Shepard's Pie
Pretty much the same stuff inside. Cottage Pie is made from beef and Shepard's Pie is made from lamb. Not too crazy about lamb so I make the beef version.

Cottage Pie!


Ingredients:

3lbs Ground beef
"Hi Mama"
 2 Carrots - chopped
2 Celery stocks - chopped
1 Yellow onion - chopped
3 Garlic cloves - chopped
1c Frozen Peas
2 c Beef stock
4T butter
4T flour
Pinch of Rosemary
Pinch of Thyme
Salt/Pepper to taste
2T Worchester Sauce
Paprika - Smoked if you have it
5 or 6 large russet potatoes - made into mashed potatoes

Directions:
  • In a LARGE skillet brown the beef and drain any excess fat. You should not salt meat until it is at least browned. Reason is if you salt the beef when it is still raw you will extract all the moisture out of the beef and it will be very dry. So brown the beef first.
  • Add Thyme, Rosemary and Salt/Pepper to taste
  • Add chopped veggies and cook until veggies are soft - Bout 10 minutes
  • Easy roux - Put butter in a micro safe bowl and add flour. Micro for about 20 seconds until butter is barely melted. Then mix
  • Add roux to skillet and let cook for a couple of minutes
  • Add Worchester Sauce
  • Add beef stock and let cook about 5 minutes to absorb most of the moisture.
  • Mix in frozen peas. No need to thaw the oven will take care of that.
  • You can also add about 1/2c red wine if you like. Just let it cook down about 5 more minutes if you do add the wine.
Put the meat in a casserole dish. Top with mashed potatoes. Sprinkle paprika then bake about 40 minutes at 400 degrees. Let sit for about 10 or 15 minutes then eat up!
